Cochinita Pibil is a must try dish when visiting the Yucatán Peninsula. The tender, pulled pork has a smokey, slightly tangy flavor and is commonly served in soft corn tortillas.

The traditional method of cooking Cochinita Pibil uses a technique which involves marinating pork in an achiote rub, made from annatto seed, a plant found in the tropics. The meat is wrapped in a banana leaf and placed in an underground barbecue pit filled with wood. The pit is then covered with stone and the pork is left to roast for several hours.

If this process sounds somewhat daunting, have no fear. Here is a simplified recipe you can use in your own kitchen to produce similar, flavorful results.

Achiote Tacos

  • 1.5 pounds boneless pork
  • 1/4 cup white vinegar
  • 2 garlic cloves, minced
  • 1 tsp fine sea salt
  • 1/2 tsp oregano
  • 1 block achiote (the size of one square of baker’s chocolate)
  • corn tortillas
  • cilantro
  • lime wedges
  • diced onion
  • radishes, sliced
  • avocado, cubed

Cut pork into 2 inch pieces and place in a large pot with vinegar, garlic, salt, oregano, achiote and enough water to cover meat completely. Boil on low heat for 2 hours or until the liquid has been reduced, leaving the tender pork in a thick, vivid orange sauce. While the meat is cooking, prepare the cilantro, onion, radish, avocado and lime garnishes. Shred the pork using a fork and serve in warmed corn tortillas with a side of rice and beans.

Chicken is also a savory substitution for this Mayan specialty.

* Look for Achiote in the spice aisle in local supermarkets here in Playa del Carmen. It comes in an orange, rectangle package. Annatto seed can also sometimes be found in specialty stores or in the international aisle elsewhere in North America.

Walking or cycling the scenic, six kilometer trail which encircles Playacar phase 2, is an excellent way to begin the day. The Significance Behind The Festive Cinco De Mayo

It happened over 150 years years, but the triumphant victory over the French on May 5, 1862, continues to be celebrated each year for its deep symbolic value.  The significant event transpired on the road to Mexico City in the small town of Puebla, approximately 85 miles east of the nation’s capital.

Although Mexico had been invaded in 1861 by Spain, France and Great Britain, the Spanish and British withdrew within 6 months of the initial assault. France, on a mission to collect on a previous debt from the Mexican government, maintained its attack and forged through several states from Veracruz on route to Mexico City.

Upon their arrival in Puebla, the French army collided with their impassioned counterparts and a great battle ensued at the Fort of Guadalupe. The massive, well-trained, French army equipped with heavy artillery, outnumbered their shoddily assembled group of Mexican adversaries by more than 2 times. Yet, by sundown, under the command of General Ignacio Zaragoza, the dubious Mexican rebellion achieved a monumental, David versus Goliath victory. The French had lost more than 500 men that day and were forced to retreat.

Unfortunately, the unanticipated triumph did not endure. One month later, the French recruited more soldiers and surged forth to eventually overtake the Mexican government. However, the Battle of Puebla inspired an unwavering Mexican pride and unity which bolstered the resistance movement.  A few short years later, at the end of the U.S. Civil War, with the aid of their neighbors to the north, Mexico reclaimed their rightful possession and re-established a Mexican Presidency.

To this day, celebrations involving parades, fireworks and folkloric dancing take place across Mexico and the United States. These important festivities are organized each May 5th to commemorate the historic triumph which occurred against all odds.

Cenotes – A Whole Other World Beneath The Yucantán Peninsula

The Yucantán Peninsula’s beauty spreads over a region enveloped by lush, tropical jungle and bordered by the  Caribbean Sea with its awe-inspiring shades of turquoise, aqua and deep blue.  Hundreds of thousands of visitors arrive each year to embrace the exquisite, natural splendor in the glorious Mayan Riviera.  Yet so much more enchanting wonder still lies beneath the surface of this area, waiting to be explored.

An estimated 10,000 cenotes, or open, access points to the world’s largest submerged cave system speckle the Yucantán Peninsula.  These surface connections to the slow-flowing, subterranean river system were created naturally millions of years ago.   Originally, this peninsula was admidst a giant reef system.  However, during the Stone Age, when ocean levels decreased, parts of the reef were left exposed and the coral was not able to survive.  As a result, a massive shelf of limestone, formed by the corals’ skeletons, emerged. Due its porous nature, slightly acidic rain waters seeped through the alkaline limestone rock and created the extensive underground waterway with its many caverns.  After the final Ice Age, ocean water levels rose, saturating the subterranean cavities, collapsing some, resulting in sink holes known as cenotes.

Some cenotes showcase fascinating cave formations boasting various sizes of icicle-shaped stalactites and stalagmites.   Others are protected by the Mexican government and have become important archeological sites.  While still others are considered to be sacred, and even haunted, by past and present Mayan civilization.

It was common for ancient Mayan cities to be built surrounding one or multiple cenotes as they were the residents’ primary source of fresh water.  Sacred ceremonies often took place around these wells which were thought to be gateways to the underworld.  Sacrificial offerings (some human), were presented to Chaac, for example, the god of rain, in times of drought. There is one famous cenote, Sac Uayum, 25 miles south of Mérida (the capital of the Mexican state of Yucatán) which legend has it, is guarded by a feathered serpent with a horse’s head, keeping fearful Mayan locals at a distance. Up to last year, marine archeologists had discovered 15 human skulls lying on this eerie cenote’s floor and more are believed to be burried within the sediment.

Some interesting archeological finds include fossilized remains of camels, giant jaguars and mammoths, fine jewelry, textiles, pottery, sculptures, as well as the oldest human remains ever found in the Americas, dating back to at least 10,000 years ago.  These significant artifacts depict the innovativeness and immense richness of the ancient Maya culture.

Cenotes have varying water depths ranging from a few meters to over 100 meters. The majority have cool, crystal clear waters with a stunning turquoise tone. The water itself has an upper layer of fresh water overlying a layer of salt water. As the rainwater filters down towards the cenote, it has a tendancy to flow out horizantally along the water table to eventually reach the ocean.

To have the opportunity to swim, snorkel and dive within these natural wonders is an experience to truly appreciate forever. The refreshing translucent waters remain at a constant 25 degrees celcius or 76 degrees farenheit year round. Many of these magnificent swim holes have jumpable cliffs, averaging about 3 meters, which present oppotune moments to face fears of heights!

In the following video, I am leaping off the ledge at Cenote Eden, located just 20 minutes south of #playadelcarmen.  After I had silenced a few demons chattering back and forth in my head, I plumeted into the pristine waters. When I eventually bobbed to the surface, I heard my 8 year old, (who had just completed his 40th jump), call out “Can’t you just try it without screaming?!?”

Most of the dive shops in town offer day trips with transportation to the 100’s of nearby #cenotes. However, you can also gain some valuable insight and directions by speaking to the friendly locals here in Playa!

A Cross-Continent Journey Which Led To Paradise

How does a perfectly content family living in beautiful British Columbia, Canada, end up in Playa del Carmen, Mexico? The seed was first planted after becoming avid fans of the alluring program on HGTV called ‘House Hunters International.’  Our favorite theme showcased beach listings, mainly in the Caribbean. We watched month after month, as couples purchased properties in beach towns and relocated to begin a new life in the Caribbean.

In 2011, after hearing countless testimonials from people who had uprooted, moved to the Caribbean and never looked back, we longed to go on our own adventure.  It is uncanny what occurs when an intense dream forms within one’s heart.  Through seemingly random events, dreams suddenly become tangible.  An opportunity to establish an office in Mexico presented itself.  Initially, although we were open, faced with the very real possibility of moving caused many doubts to surface.  Were we willing to take the risk and leave a wonderful family, friends, a great school, house and country behind to dive into an uncertain future in a foreign nation?

My husband and I made a quick four day trip #playadelcarmen in search of a house that would suit our family’s needs. The moment we entered the gates of Playacar, I felt home!  The cobblestone streets were lined with palms and vibrant bougainvilleas. Some residents opted for a golf cart over a car and the neighborhood seemed to rise up to welcome us. The fourth home we saw checked off all the points on our wish list and we signed a year lease.

As soon as we made the definite decision to start life anew in Mexico, everything fell into place.  Our home rented in one day and we were on the plane within a month.  Our original plan to stay one to three years has since become a distant memory as we are about to complete our fourth year in this wonderland.

One of the cultural differences I cherish most is the warmth of the people.  Fathers bid their teenage sons farewell with a hug and a kiss on the cheek.  Teachers welcome their students with affectionate embraces. During my son’s soccer practice, my dad and I once watched as a young girl ran onto the field, jumped into the arms of the coach and wrapped her arms around his neck for a hug.  My father noted that the girl must be his daughter and was taken aback when I told him the child was not his, but a student.  An unabashed fondness is shared within this culture and it is a beautiful thing to be part of.

Playa del Carmen not so long ago, was an undeveloped fishing village and that simplicity of life still remains.  There are a few shops around town and a recently erected mall in the city’s center.  However, we are not inundated and lured towards insatiable consumerism as what occurs in other cities of the world.  Children’s toys are often left to collect dust in the corner of their rooms as they spend hours outdoors, swimming in the pool, playing “futbol”, golf or tennis,  riding their bikes and frolicking on the beach.

Most national and international families that come to Playa leave their relatives behind which opens wide a door to new friendships.  Due to the endless summer climate, we often gather together around the pool or in a circle of beach chairs on the sand to indulge in laughter, good conversation and cool beverages.  We feast upon natural, homemade food since most of the manufactured grocery items are imported and carry with them an absurd price tag.

I sometimes miss the majestic views of the snow-capped Rocky Mountains, however, there is something about the rhythm of the ocean waves which dance along the alabaster shoreline, that never ceases to memorize me. The awe of the sun as it rises in all its glory over the turquoise sea literally snatches the breath from the observer.

Over the years, I have had the pleasure of spending time in and living in various parts of this diverse country.  I have come to the conclusion that Playa del Carmen has a magical quality like no other region in Mexico.  I may not live here forever, so my aim is to capture and secure within my heart, each spellbinding moment of this surreal life.
